Brad Quaile, Cheesemaker
Behind every great cheese is a cheesemaker and our product is no exception. Brad Quaile is that person behind all the cheesy goodness that is coming from our plant in St. John’s, Newfoundland.
Brad joined our Farmers Dairy/Central Dairies team in the Fall of 2010. Born and raised in St Albert, Ontario, Brad’s first experience in the cheese industry came as a summer job during high school. This job was at St. Albert Cheese Cooperative. Once he graduated, Brad took a permanent position at St. Albert Cheese working in the plant. It was during this time that he was offered an opportunity that began his journey…he was asked if he wanted to learn how to make cheese. He jumped at this chance and has grown and developed into an award winning cheesemaker.
In the years he worked at St. Albert Cheese, Brad had the opportunity to be trained by many talented cheesemakers. The first types of cheese that he learned to make were Cheddar, Colby, Brick and Italian-style Mozzarella. Under the direction of Josef Leupi, former Head Cheesemaker at St. Albert, Brad continued to learn the art of making both Swiss and Gouda. As Brad developed his portfolio as a cheesemaker, he also gained experience in making Aged Cheddars, Parmesan and processed cheese spread.
After leaving St. Albert Cheese, Brad spent time making Feta, yogurt and cream cheese mainly from goat’s milk. He later moved to western Ontario to work at Pine River Cheese and Butter Co-op as Head Cheesemaker. In 2009, he took 1st place at the British Empire Cheese Show for Medium Cheddar by receiving the highest score for all small plants in Canada.
In 2010, Brad moved to Newfoundland to be the cheesemaker for our Specialty Cheese Plant. His initial focus was on Swiss cheese. Since then he has added many new varieties to our repertoire. Some of these varieties include Feta, Gouda, Havarti, and Edam Cheese with 5-Peppercorn just to name a few. Trials on other exciting varieties of cheese continue to take place.
While Brad’s main focus is the cheese plant in Newfoundland, his broad experience allows him to lend a hand to the team in the cheese plant in Truro, Nova Scotia.
Brad’s passion is making great cheese but outside work his other interests include all types of sports particularly hockey, both playing and watching. While Brad admits that he does miss home, he is quickly adjusting to life in Newfoundland and has become a valuable asset to the Farmers Dairy/Central D team.
